Chocolate Cookies



 

Ingredients
 
225g butter
1 cup brown sugar
½ cup white sugar
2 eggs
2 tsp vanilla essence
3 cups cake flour
2 tsp baking powder
2 Tbs cocoa powder
½tsp salt
150g (1box) stafford dark chocolate discs
(chopped)
 
Method 
 
Cream butter and sugar together until creamy. Add eggs 1 at a time and continue to beat on Meduim speed. Add Vanilla essence and mix.
Sift in dry ingredients a little at a time and beat on Meduim to high speed.
Add chopped chocolate
Mix until evenly incorporated.
Spoon cookie dough and roll in hand until it resembles a ping pong ball.
Place on tray evenly spaced as the cookie will melt down into a circle.
Bake in a preheated oven, middle tray 180°c for 15 minutes.
Allow to cool on cooling rack as cookies will be soft and will crisp up once cool.

    • Preheat the oven to 350 degrees F (175 degrees C).

    • Beat sugar, butter, eggs, and vanilla in a large bowl until light and fluffy.

    • Combine flour, cocoa powder, baking soda, and salt in another bowl; stir into the butter mixture until well blended. Mix in chocolate chips and walnuts. Drop by rounded teaspoonfuls onto ungreased cookie sheets.

    • Bake in the preheated oven just until set, 8 to 10 minutes. Cool slightly on the cookie sheets before transferring to wire racks to cool completely.
