Ingredients:
• 2 cups crushed graham crackers
• 1/4 cup granulated sugar
• 1/2 cup unsalted butter, melted
• 4 packages (8 ounces) cream chesses, softened
• 1 1/4 cups granulated sugar
• 4 large eggs
• 1 teaspoon vanilla extract
• 1/4 cup sour cream
• 1/4 cup all-purpose flour
Instructions:
1. Preheat your oven to 325°F (163°C). Grease a 9-inch springform pan with butter or nonstick cooking spray.
2. In a bowl, combine the graham cracker crumbs, 1/4 cup granulated sugar, and melted butter.Mix until crumbs are evenly coated.
3. Using the back of a spoon or your hands, press the crumb mixture firmly into the bottom of the prepared springform pan to form an even layer. Bake the base in the preheated oven for 10 minutes. Remove from oven and allow to cool while you prepare the filling.4. In a large bowl, beat cream chasse and 1 1/4 cups granulated sugar until smooth and creamy.
5. Add the eggs one at a time, beating well after each addition. Be sure to scrape down the sides of the bowl to make sure everything is well mixed.6. Mix vanilla extract, sour cream and flour until the dough has a smooth, even consistency.
7. Pour the cheesecake batter over the cooled base in the springform pan and spread it evenly with a spatula.
8.Place the springform pan on a baking sheet to catch any drips, then place it in the oven. Bake the cheesecake for 55 to 60 minutes or until the edges are set but the center still jiggles slightly when shaken.
9. Turn off the oven and leave the cheesecake in the oven with the door open for about an hour to allow it to cool slowly.
10.Once cooled in the oven, remove the cheesecake and allow it to cool completely to room temperature. Once cooled, cover the cheesecake and refrigerate for at least 4 hours or overnight to set.
11. Before serving, run a knife along the edge of the cheesecake to remove it from the pan. Loosen the springform pan and transfer the cheesecake to a serving plate.12. Cut the cheesecake into portions and serve cold. Optionally, top each slice with whipped cream, fresh berries, or a drizzle of caramel or chocolate sauce.
